To cool down in the summer heat, here is our recipe for decadent Armagnac ice cream; a refreshing dessert created by Miss Charlotte, chef at Château Bellevue...

The following recipe makes 1 liter of ice cream:
Ingredients
500g of milk
250g of cream
9 egg yolks
125g sugar
200ml of Armagnac Château de Bordeneuve Hors d'Age
Boil the milk and cream together in a saucepan.
Beat the egg yolks and sugar in a bowl until pale. Pour the boiling liquid carefully over the egg mixture. Return everything to the saucepan and cook over a very low heat until the cream thickens, stirring constantly with a wooden spoon. Stop the cooking process by placing the bottom of the saucepan in a large bowl of ice. Add the Armagnac and mix. Churn the mixture in an ice cream maker once the cream has completely cooled.
To serve, add a few mint leaves as garnish.
